Practical IDDSI Implementation for Food Scientists & Technologists

This hands-on masterclass will be facilitated directly by global leaders of the IDDSI framework from Canada and United Kingdom specialising in fluid rheology and texture-modified diet training led by the framework’s founding leadership:

  • Mr Peter Lam – CEO & Co-Chairperson of IDDSI, Registered Dietitian (Canada)
  • Dr. Ben Hanson – IDDSI Board Member, Engineer (UK) and Associate Professor at University College London (UCL), specializing in fluid mechanics, rheology, and mechanical testing of foods

The session will also include insights from local experts:

  • Mr Goh Huai Zhi – Principal Speech Therapist, St Luke’s Hospital and EatSafe SG trainer
  • Dr Kalpana Bhaskaran – Deputy Director and Head of Glycemic Index Research Unit, Temasek Polytechnic 

Key Relevance for Food Scientists, R&D Specialists & Product Developers

  • Direct laboratory practice using official IDDSI audit methods (gravity flow test using 10 mL syringes, fork drip test, spoon tilt test, and fork/chopstick pressure tests) to characterize thickened fluids and pureed/minced foods applied to local food.
  • Collaborate directly alongside clinical speech therapists, dietitians, and institutional chefs to understand end-user requirements and regulatory compliance in healthcare catering.
  • Successful completers receive an global credential, an official IDDSI Academy Certificate of Completion and placement on the IDDSI Academy Registry.
  • Capped strictly at 40 pax per run (80 pax total) to ensure hands-on instrumentation access in TP’s specialized food science laboratories.

Course Details

  • Format: Asynchronous online prerequisite module (released 1 month prior) followed by a 1-day practical laboratory workshop
  • Dates (Choose 1 Full-Day Practical Laboratory Session): Friday, 13 November 2026 OR Saturday, 14 November 2026
  • Fees: SGD 550 excluding GST
  • Venue: Temasek Polytechnic
